quinoa + black bean stuff bell peppers

happy thursday and st. patrick’s day! i arrived in houston last night to see my great friend karla! :) there’s a rodeo in town and jason aldean so it called for a trip. today we’re going to the blue bell creamery factory (!!) and a winery tour. pics to come!

in other news, i made these babies the other night. i’ve been loving all things stuffed, like these, and couldn’t wait to stuff these with quinoa.

i added a little bit of olive oil in a sauce pan and added chopped green onion, jalapenos (duh), red bell pepper, green bell pepper, garlic, and whole peeled tomatoes (diced). i then chopped off the tops and de-seeded the bell peppers that are being stuff.

after sauteing for about 3-5 minutes, i added the quinoa and water and cooked for about 10-15 minutes, or until all the water is evaporated.


cover the casserole dish with tin foil and bake for 45 minutes. take out, remove tin and add shredded spicy jack cheese and bake for another 10 minutes, or until cheese is melted and golden brown.

i also squeezed some lime over the bell peppers and added a lot few squirts of tabasco.

recipe

1 cup quinoa

1/4 cup red bell pepper, diced

1/4 cup green onion, diced

1/4 cup jalapenos, diced

1/4 cup green bell pepper, diced

1 can whole peeled tomatoes, diced (save the juice)

i can black beans

1/4 cup cilantro

1 garlic clove

  1. These look delicious! I recently made something similar and using Quinoa was a novelty for me. I loved it because it really adds some substance to the mixture and makes it filling. I tried mine with feta cheese on top which contrasted nicely with the sweetness of the pepper :D
