happy monday! i’m having such a busy day! tiring, but good.
how was your easter? delicious i hope! i woke up to an easter basket filled with snickers and doritos. im a health nut, but these 2 treats are dangerous around me.
we made some of these in the morning, adding more veggies this time. then i made a super yummy brussels sprouts casserole dish. i’ve been craving them lately.
first i sauteed onions and garlic in a pan, then added chopped and cleaned brussels sprouts.
they’re so pretty and green.
in the mean time, the boy made some healthy breadcrumbs for a topping. he used olive oil and fresh seasonings, then placed in the oven for 5-10 minutes.
after they were all nice and crisped, I took the brussels sprouts and placed in a casserole dish, then added gruyere cheese, parmesan cheese and the breadcrumbs. cheese galore!
i placed in the oven on broil to let the cheese melt and brown. everyone loved them.
we also had potato salad, green beans, fresh salsa, shrimp, prime rib (for all the meat eaters), salmon for me (thanks dad!), sauteed mushrooms, cream puffs and strawberries with my aunts awesome fruit dip! awesome first dinner for easter.
