It’s Friiiiday! :) This week has just flown! I’m getting super excited for our New Year’s Eve party this weekend. I’ll be making my Shrimp Ceviche (recipe below), champagne cupcakes, champagne jello shots, my guacamole and maybe a few other things up my sleeve. :)

So, I’ve decided to start a weekly series called “Perfectley Peared Bites.” Every Friday, I’ll have a new bite that combines flavors that compliment one another just perfectly! Some people (those who eat turkey) say that cranberry sauce, turkey, and mashed potatoes with gravy all mixed in one bite is perfect. It will be fun things like that. :)
Today, I’m featuring this little number:
Whole wheat bagel thin + crunchy peanut butter + honey + ground flaxseed. Try it.
1 pound bag of pre-cooked shrimp
1 avocado, diced
3 tomatoes, diced
1 jalapeno, diced
1 bell pepper, diced
1/2 cucumber, peeled and diced
1/4 of a red onion ( I used yellow – all I had), diced
Cilantro to taste ( I add a lot)
3 limes, juice
3 lemons, juice
Corn (can use 1/2 of a can (drained) or 1 grilled corn)
1 tsp olive oil
salt and pepper to taste
1. Take out the bag of shrimp (thaw if needed), remove the tails and place in a medium bowl.
2. Squeeze juice from lemons and limes over the shrimp.
3. Mix all remaining ingredients in with the shrimp and citrus juices and add olive oil and salt, pepper, and cilantro to taste.
