A few weeks ago, a co-worker had me try a little ball of goodness that she makes regularly for snacks. There is no added sugar and only a few simple ingredients that pack a protein punch. They. are. delicious. I’ve started making them each week. And now I won’t have to get odd looks whilst scooping out spoonfuls of crunchy peanut butter from my Costco size jar at my desk.
I can look normal eating again!
She named them “Laraballs” because they’re similar to Larabars, which are made from nuts and fruit and all-natural stuff.
I made them a few times for my friends too and they adore them. Thought I’d pass along the recipe. It’s a great one to mix and match with the different nuts or extracts (I’m going to try almond extract next time). Enjoy.
Healthy ‘Laraballs’
Ingredients:
1/2 cup almonds
1/2 cup cashews
1 cup coconut flakes
1.5 T coconut oil
1.5 T vanilla extract
1 cup pitless dates
Directions:
Put all ingredients into a Ninja, blender or food processor. Blend until nuts are chopped, small and fine. Roll into balls and keep refrigerated. Makes about 12.
