Happy Wednesday! It was actually a decent day this morning. Breezy and cool from night showers, but too humid for my hike. I was drenched in sweat and breathing heavily!
Reminded me of the tropics. Good thing is, you don’t need to live near the tropics to have a little taste of its fruit. Just make a vegan pineapple coconut banana bread loaf and that should do the trick. It’s moist with a toasty top. So great fresh out of the oven.
I made this for a little poker party my boss hosted a few weeks ago and even though it was vegan and made with whole wheat flour, everyone enjoyed it. I used this recipe, but modified it a little by using coconut oil instead of canola oil and straight w/w flour.
